How did Saif manage to wake someone under the spell up?
Most Druids, other than their spells connected to nature, have healing or cleansing-related powers. So basically, Saif lifted Cecil's spell from Lynx.
Remembering? Jinhai's feather?
The Fate Reweaver's power sometimes has holes and doesn't work correctly.
The Bookkeeper, who is also a druid has a strong cleansing spell on himself, which is why he remembers past versions and can write them down.
Cecil with his unique role in all this, remembers some things, and some things not because of Vree taking his memories. But he definitely remembers more than the average person.
However, an average person might accidentally remember a few things too, like how Jinhai remembered Lynx's name in his backstory oneshot, and then completely forgot about him a few sentences later.
Other than these, there can be other errors like how Jinhai still wears the feather accessories from Saif's wings that he received as a symbol of their strong friendship, even though in this timeline they never knew each other.
Why is Vree different?
When Cecil first made him they looked and acted completely identical. However, as time passed he obviously gained his own traits, since they are two different people now. He has much more emotional intelligence than Cecil now, and shows emotions way more than him, even happiness despite his constant suffering.
His appearance also changed due to the constant stress and traumas; his hair became whiter, longer and even damaged looking, his face and whole body looks more unhealthy and very weak, and they suspect that he even became a little shorter, but that's not certain.
PS: He never had strong magic like Cecil does! It's true that his frail figure is thanks to him not being able to take care of himself properly, but he never had such power, magic and fighting skills as Cecil does to begin with. Cecil can't just make a whole army of greatest witches duplicating himself.
What spell did Cecil put on Jinhai?
While a regular person most likely doesn't remember anything from past versions, Cecil does have a spell that partly lifts the indivitual from the forgotten memories. This is what he put on Jinhai, so that he can remember the two of them becoming allies, and their shared purpose.
Mystical creature look?
While this world is full of all kinds of mystical creatures, most of them has a so called 'human form', where most of their physical traits that are specific to their species are not showing. They can transform from one to the other, or can even transform only partly. These transformations are either used for special skills (Jinhai's enhanced hearing when having his naiad ears), can be used to hide what species they belong to, or can just be a preference to using one or the other. (For example, Cecil originally has pointy ears being a witch, but prefers to use a more 'human' look.)
There still might be some telling signs to one's species, like how a very tall individual is most likely a druid, or how most naiads can't hide their naiad face markings and have distinguishable hair texture.

If you know what it's like when bleached(?) / dyed hair is wet, it's kind of like that!! Not very unsimilar to human hair when dry, but still a bit like that. Overall, together with his face markings they can be identified, that's why they stay at Tír Ríoga.

But Saif's main colors are white, long white hair and clothes, and he has druid antlers

And in contrast to Saif who has a wise elegant druid vibe, Lynx has more of an assassin look, mainly black colors. His arms are out and have tattoos/markings on them. He's an elf so he has elf ears too.

Jinhai and animals...
Jinhai is very scared of / disgusted by every animal that has fur, so most animals basically.
Where he grew up he mostly only encountered water creatures / fish, so he's completely fine with touching animals that have a slimy texture, but somehow cannot comprehend fur on animals and he'd get the ick touching them. (For him it's like mold lmao, he understands that they seem very soft but if he had to touch them he'd collapse poor bro)
It could happen that if a furry animal would crawl on him, he's start screaming, and at one point his scream frequency would be so high that non-naiads wouldn't hear it. So you'd just see him silently screaming, literally.
Cecil's umbrella
Cecil always carries around an purple umbrella with him, because he feels bald without his hat on. He does have a hat with his uniform, but compared to his big witch hat, "it is not a hat." (-Cecil)
Somehow, the umbrella above his head feels like a good alternative.
